Add a little oil when boiling the sprouts, in order to raise the temperature of the water and making it possible to cook the sprouts in a short amount of time. If you want to cool beansprouts after cooking, lay them out to cool rather than running them under water. This will prevent the nutrients and flavour running out with the water. Beansprouts come with small roots attached. Removing the rootlets will make the sprouts less stringy and better their texture. The roots are high in fibre and healthy for you if you do want to keep them on.
